      随机选择山地放养五华三黄鸡30只为试验材料,对其进行体尺、屠宰性能、肉品质和血液生化指标测定。结果表明:不同性别的五华三黄鸡在体尺上存在差异,公鸡的体尺高于母鸡;公母鸡的屠宰率、胸肌率和腹脂率差异不显著。公母鸡肉色和熟肉率胸肌均显著低于腿肌,但胸肌失水率均显著高于腿肌;公母鸡胸、腿肌粗蛋白与粗脂肪含量均差异显著。公母鸡血液各生化指标差异均不显著。

      30 Wuhua Three -Yellow Chickens raised in the mountain were determined for the body measurements, slaughter performance, meat quality and biochemical values in blood. The results showed that the body measurements biwteen gender was significant difference, which the cock's higer than the hen's. The percentage of slaughter, breast muscle and abdominal fat was not significant. The meat color and cooked meat percentage of breast muscle were significant lower than that of the leg muscle, but the percentage of water loss was opposite. Besides, the crude protein and lipid in breast muscle and leg muscle were significant. However, the biochemical values in blood was not significant.
