| 为探讨芒果加工副产物的营养价值， 以 3 种芒果品种为试材， 研究芒果加工副产物的生物活性物
质含量和抗氧化能力。 结果表明： 3 种芒果果皮中果糖含量最高， 种胚中葡萄糖含量最高； 果皮中， 热农 2 号
的总糖含量最高， 果胚中， 粤西 1 号的总糖含量最高， 芒果果皮的糖含量高于种胚； 芒果果皮和种胚均富含酚
类物质， 总酚含量分别为 103~119、 90~113…mg/g， 酚类物质中的酚酸和单宁含量较高； 芒果果皮总酚含量高于
种胚， 果皮的抗氧化能力也高于种胚。 |
