| 为探讨基于云南烟叶替代津巴布韦烟叶配方模块，从外观质量、常规化学成分、中性香味成
分和感官质量等方面，对云南烟叶和津巴布韦烟叶的质量进行比较研究。结果表明，外观质量方面，津巴
布韦烟叶颜色深于云南烟叶，身份稍厚些、油润感更强些，而成熟度、叶片结构、色度等方面相当；化学
成分方面，津巴布韦烟叶总糖含量、糖碱比、氮碱比明显低于云南烟叶，钾氯比明显高于云南烟叶，云南
烟叶糖碱比较高，基本在12 左右，其中云南昆明C2F 等级烟叶糖碱比高达15.25，津巴布韦烟叶糖碱比在
7 左右；中性香味成分方面，津巴布韦烟叶有的香味成分比云南烟叶高，有的比云南烟叶低，但津巴布韦
烟叶中性香味成分总量（239.48～266.29 μg/g）明显高于云南烟叶（207.43～222.77 μg/g）；感官质量方
面，津巴布韦烟叶香气主要表现为焦甜香韵，云南烟叶香气主要表现为清甜香韵，感官评吸总分差异不明
显。总体来看，云南烟叶与津巴布韦烟叶质量水平较为接近，质量风格有一定的差异性。为了弥补津巴布
韦烟叶数量的不足，进行了津巴布韦烟叶替代试验，发现单纯使用云南烟叶替代津巴布韦烟叶难以取得理
想的效果，而以云南烟叶、贵州烟叶、湖南烟叶、赞比亚进口烟叶组成的配方模块替代津巴布韦烟叶效果
较好。 |

| From the appearance quality，chemical components，neutral aroma components and smoking
quality，comparative analysis on the quality of Yunnan tobacco and Zimbabwe tobacco was researched. On
the aspect of appearance quality，the color of Zimbabwe tobacco was deeper than that of Yunnan tobacco，
and its identity was slightly thicker and oil sense was more strong，other aspects were equivalent. In chemical
components，the total sugar content，the ratio of sugar to nicotine and the ratio of nitrogen to nticotine of Zimbabwe
tobacco were significantly lower than those of Yunnan tobacco，and the ratio of potassium to chlorine was
significantly higher than that of Yunnan tobacco，the ratio of sugar to nicotine of Yunnan tobacco were relatively
high，basically at around 12，the ratio of sugar to nicotine of C2F grade tobacco in Kunming was 15.25，and the
ratio of sugar to nicotine of Zimbabwe tobacco was about 7. In the aspect of neutral aroma components，some aroma
components of Zimbabwe tobacco were high，and some aroma components of Yunnan tobacco were high，but the
total amount of neutral aroma components in Zimbabwe tobacco（ 239.48-266.29 μg/g ） was significantly higher
than that in Yunnan tobacco（ 207.43-222.77 μg/g ）. In the aspect of smoking quality，the aroma of Zimbabwe
tobacco was coke sweet flavor，the aroma of Yunnan tobacco showed sweet and sweet flavor，and the total scoreof sensory evaluation was not obviously defferent. In general，the quality level of Yunnan tobacco and Zimbabwe
tobacco was relatively close，the quality of style was different. In order to compensate for the lack of quantity of
Zimbabwe tobacco，Zimbabwe tobacco substitute test found it was difficult to achieve the desired effect of only
using Yunnan tobacco，but it was better that tobacco blending module in Yunnan，Guizhou，Hunan and Zambia
tobacco was substitute for Zimbabwe tobacco. |
