(目的)试验选用杜洛克公猪与藏香母猪的二元杂交组合猪(简称杜藏猪,DZ)和杜耳母猪(杜洛克公猪与小耳花母猪的后代)与藏香公猪的三元杂交组合猪(简称杜耳藏猪,DEZ)来比较肉品质的差异。(方法)于10月龄,禁食12 h后,分别挑选8头(公母各半)进行屠宰取样,测定其胴体品质和肉质性状以及肌肉中肌内脂肪、肌苷酸、脂肪酸和氨基酸的含量。(结果)结果表明:1)DZ猪和DEZ猪的胴体品质无显著差异(P>0.05)。2)宰后45 min,DZ猪肌肉的pH值显著高于DEZ猪(P<0.05);宰后24 h,DZ猪肌肉的L*值显著低于DEZ猪(P<0.05);DZ猪肌肉的剪切力显著低于DEZ猪(P<0.05)。3)DZ猪肌肉中肌内脂肪和肌苷酸的含量显著高于DEZ猪(P<0.05)。4)DZ猪肌肉中亚麻酸、二十碳烯酸和二十碳二烯酸含量显著高于DEZ猪(P<0.05)。5)DZ猪肌肉中蛋氨酸、苏氨酸、丙氨酸、谷氨酸和酪氨酸的含量显著高于DEZ猪(P<0.05),且DZ猪肌肉中总氨基酸、总必需氨基酸和总非必需氨基酸的含量显著高于DEZ猪(P<0.05)。(结论)由此可知,杜洛克公猪与藏香母猪的二元杂交组合猪具有更优的肉品质和营养价值。 |

(Objective) In order to compare the difference of meat quality, two-way crossbred pigs (DZ) and Three-way Crossbred Pigs (DEZ) were used. (Method) At the age of 10 months, after fasting for 12 hours, 8 heads (half male and half female) were selected for slaughter and sampling, and the carcass quality, meat quality and intramuscular fat, inosinic acid, fatty acid and amino acid content were measured. (Result) The results showed that: 1) there was no significant difference in carcass quality between DZ and DEZ (P>0.05). 2) The pH value of muscle in DZ pigs was significantly higher than that in DEZ pigs at 45 min after slaughter (P<0.05); the L* value of muscle in DZ pigs was significantly lower than that in DEZ pigs at 24 h after slaughter (P<0.05); the shear force of muscle in DZ pigs was significantly lower than that in DEZ pigs (P<0.05). 3) The contents of intramuscular fat and inosinic acid in DZ were significantly higher than that in DEZ (P<0.05). 4) The contents of linolenic acid, eicosenoic acid and eicosadienoic acid in muscle of DZ pigs were significantly higher than that of DEZ pigs (P<0.05). 5) The contents of methionine, threonine, alanine, glutamate and tyrosine in muscle of DZ pigs were significantly higher than that of DEZ pigs (P<0.05), and the contents of total amino acids, total essential amino acids and total non essential amino acids in muscle of DZ pigs were significantly higher than that of DEZ pigs (P<0.05). (Conclusion) it can be concluded that the crossbred pigs of Duroc and Tibetan sows have better meat quality and nutritional value. |
