Abstract:
      Sugar plays a key role in improving the quality of fruits, which directly affects the color and taste of fruits, and then influences consumers’ acceptance of fruits. Sugar is not only the carbon source and energy source of plants, but also the signal molecule, which is involved in the regulation of embryo formation, seed germination, fruit vegetative growth and reproductive growth during fruit growth. The changes of sugar synthesis, transport, metabolism and content during fruit development and ripening are regulated by enzymes, genes and transporters. In addition, sugar metabolism has complex relationships with hormones and pigments during fruit development and ripening. Herein, it reviews the role of sugar metabolism and its signal transduction mechanism in fruit development and ripening, and introduces the relationship between sugar signal transduction mechanism and the regulation of hormones and pigments, in order to provide important theoretical basis for fruit quality change and postharvest storage.
