    摘要

    我国是生猪养殖与猪肉消费大国,多年来猪肉总产量和人均猪肉占有量居世界首位。由于人们对猪肉品质需求的不断提高及研究的不断深入,我国猪营养研究也经历了从最初营养需要的研究,到通过营养技术调控猪肉品质、肠道健康、繁殖性能和免疫等方面的转变。随着研究模型、组学技术、功能性分子营养以及肠道健康等研究手段的不断进步,生猪营养调控技术的研究进入到高速发展阶段。综述了近 5 年来国内外生猪相关营养调控技术,包括母猪、公猪、仔猪和生长育肥猪的营养需求(能量、蛋白质和氨基酸、常量和微量元素、 添加剂等),生产性能与营养调控,饲料营养价值评定,精准饲喂技术等多个方面,以期为今后生猪营养调控技术的进一步研究提供参考。

    Abstract

    China is a large country of pig breeding and pork consumption, with the total output of pork and the per capita pork consumption ranking first in the world for many years. Due to the continuous improvement of people's demand for pork quality and the deepening of research, the pig nutrition research has also experienced a transformation from the initial study of nutrient requirement to the regulation of pork quality, intestinal health, reproductive performance and immunity through nutrition regulation technology. At present, with the continuous progress in research methods such as research model, histology technology, functional molecular nutrition and intestinal health, the research of pig nutrition regulation technology has entered a stage of rapid development. The swine nutrition regulation technologies at home and abroad in recent five years are reviewed, including nutrient requirements (energy, protein and amino acids, minerals and trace elements, additives, etc.) in different physiology period (sow, boar, piglet and growing-finishing pig), production performance and nutrient regulation, feed nutrition value identification and precision feeding technique, to provide references for further research of swine nutrition regulation technology.

  • 我国是目前世界上畜禽养殖量最大的国家,约 占世界养殖总量的 1/4 左右,其中猪的饲养量、存 栏量均位居世界第一,肉类产量也为世界第一。据 统计,2019 年我国猪肉产量 4 255 万 t,占全国肉类 总产量的 55% ;生猪产业产值占全国畜牧业产值的 43.2%,在畜牧业中居于关键地位。2018 年以来,受 非洲猪瘟影响,我国生猪存栏量、出栏量以及猪肉 产量均大幅下降,据国家统计局数据显示,2019 年我国生猪存栏31041 万头,同比下跌27.5%;生猪出栏54419 万头,同比下跌21.6%;猪肉产量4255 万t,同比下降21.3%。然而我国以猪肉为主要蛋白质来源,人们对猪肉的需求短期内不可能改变。 如何在非洲猪瘟疫情的影响下养好猪,在现有品种和养殖环境相对稳定的情况下,如何通过营养调控来提高生猪生产效率一直是生猪营养领域研究的重点。 近年来,我国猪营养研究主要集中在通过营养技术调控种猪繁殖性能、仔猪肠道健康、育肥猪肉品质和机体免疫等方面。在种猪营养方面,提升种猪繁殖性能以及母子程序化的相关研究较为突出; 在仔猪营养方面,随着药物饲料添加剂退出计划的实行,替代产品研发热度持续上升,对分子营养和肠道健康的相关研究较为突出,通过营养干预调控肠道菌群及代谢物来影响仔猪健康也是当前研究热点,而且多组学技术的应用越来越广泛;在生长育肥猪营养方面,以低蛋白饲粮及改善肉质的研究居多;在猪营养需要量及精准营养方面,国家越来越重视饲料原料营养价值评定和动物营养需要量标准等基础性研究工作,拟构建并推广使用饲料营养与饲养大数据库平台,为全面推行饲料精准配方和精准配制奠定重要基础。及时总结当代猪营养研究的新成果和经验,将对推动猪营养与饲料科学研究进入新高度具有重要意义。本文系统阐述了近5 年国内外生猪营养调控技术,内容涉及母猪、公猪、仔猪和生长育肥猪的营养需求(能量、蛋白质和氨基酸、常量和微量元素、添加剂等),生产性能与营养调控,饲料营养价值评定,精准饲喂技术等多个方面取得的研究进展,以期为今后猪营养调控技术的进一步研究提供参考。

  • 1 母猪营养需要及提高繁殖性能的营养调控研究

  • 母猪的营养需要是以提升母猪繁殖性能和泌乳力为核心。由于母猪需经历空怀、妊娠前期、妊娠中期、妊娠后期、哺乳期等多个阶段,其营养需求差异较大,须根据母猪不同的生理阶段调整母猪的饲养标准。

  • 1.1 能量

  • 能量是维持母猪生产的基础。丹麦猪营养标准提出,哺乳料和妊娠料中的代谢能(ME)分别为13.31、12.60 MJ/kg。在不同的生理阶段,母猪的能量需要有所差异。研究发现,母猪初情启动的适宜净能需要量为10.15 MJ/kg,初情后至配种阶段为10.04 MJ/kg。在妊娠后期33.78 MJ/d净能(NE)可以改善产仔体重和分娩时间,14.24 MJ/kg的ME可提高仔猪的生产性能。哺乳母猪65%~85%的能量需要用于生产乳汁[1]。可以通过提高母猪哺乳料中油脂的含量来增加能量摄取,将母猪哺乳料中油脂的补充量从2%增加到11%,每天可增加约4.60 MJ ME的摄入[2]

  • 1.2 蛋白质和氨基酸

  • 蛋白质是母猪乳汁中的主要组成。Hojgaard等[3] 研究发现,在95%回肠可消化(SID)赖氨酸(Lys) 水平下,乳汁中的蛋白和酪蛋白含量随着粗蛋白(CP)水平的增加而增加;当日粮SID CP水平为111~118 g/kg时乳汁中的尿素含量最低,116 g/kg时脂肪含量最高,125 g/kg时产仔性能最高。然而在蛋白饲粮资源紧张的环境下,需要在保证母猪正常生产的情况下降低日粮蛋白含量。妊娠母猪饲料中正常CP含量为14.5%,在降低2%~4%的情况下, 对其繁殖性能和背膘不产生影响。Eskildsen等[4] 研究发现,将一胎母猪妊娠期间的日粮蛋白质含量降低至12%,对产活仔数量、产仔体重、母猪的尿液或血浆代谢物均没有负面影响;而在哺乳期饲喂低蛋白日粮,由于胃容量较小导致SID Lys摄入量降低,从而降低了泌乳后期的产奶量。 为满足母猪的正常生产需要,在降低蛋白水平的情况下,要通过调控氨基酸水平来维持营养均衡。NRC(2012)提出,初产母猪妊娠天数< 90 d、 妊娠天数> 90 d及哺乳期的最佳Lys摄入量分别为12.4、19.3、52.6~56.5 g/d,母猪怀孕料的ME和SID Lys以12.47 MJ/kg、0.58%为宜,妊娠107 d后日粮ME和SID Lys水平为13.3 MJ/kg、1.06%时母猪的体重和背膘情况最好。对于哺乳母猪而言, 采食量、消化能(DE)和Lys水平是影响仔猪断奶重的重要因素,正常的哺乳日粮DE、Lys标准为15.2 MJ/kg和1.28%, 但当ME、SID Lys和脂肪水平分别为13.91 MJ/kg、0.99%和2.5%时生产性能最好[5]。Gao等[6]研究了Arg和Lys不同比例对母仔猪生产性能的影响,发现随着饲粮Arg水平的提高,母猪的产活仔数有线性增加效应,根据折线模型得出Arg/Lys为1.01 和1.02 时最佳。Che等[7]提出,SID Lys为20.6 g/d时对母猪泌乳性能产生积极影响。高产泌乳母猪日粮中ME、SID Lys满足14.04 MJ/kg、0.81%时才能最大限度地增加产仔数,而SID Lys为0.90%时可以最大限度减少母猪体重损失。Holanda等[8]发现,母猪日粮中添加1.0%L-Arg可以激活增殖机制,改善乳腺组织的血管生成,并增加母猪乳腺中编码抗氧化酶基因的mRNA表达。分析哺乳至断奶发情期间的仔猪初生重、产活仔数、断奶成活率及母猪背膘损失发现, 哺乳母猪的最佳Trp ∶ Lys在0.22~0.26 之间[9]。 Gao等[10]研究发现,妊娠后期和哺乳期添加L-Val(Val ∶ Lys=0.87 ∶ 1)显著提高了断奶仔猪和哺乳仔猪的体重,显著提高了母猪的采食量及乳质量。 Craig等[11]发现,日粮Val ∶ Lys为1 ∶ 1 时,母猪哺乳期第7、21、28 天的乳脂含量增长的同时其背膘损失增大;而当母猪日粮DE和Lys(Val ∶ Lys为1 ∶ 1)水平为14.4 MJ/kg和0.92%、采食量为7.7 kg/d时,仔猪(窝均13 头)28 d断奶体重达8.6 kg。 Xu等[12]研究发现,妊娠后期和哺乳期母猪日粮中添加牛磺酸(Tau)能改善仔猪肠道形态和肠道屏障功能以及抑制氧化应激,从而改善仔猪的生长性能。

  • 1.3 维生素和微量元素

  • 维生素是母猪维持正常代谢和繁殖性能所必需的微量低分子化合物,主要以辅酶形式参与机体代谢,调控激素分泌。研究表明,当前的NRC(2012) 推荐的维生素用量足以满足母猪妊娠的需要,而且日粮中过量补充维生素对母猪的妊娠和哺乳并没有积极影响。但Zhou等[13]发现,妊娠母猪饲喂高浓度维生素D3(100 μg/kg)能显著提高新生仔猪和断奶仔猪的背最长肌(LM)和腰大肌(PM) 的肌细胞生成素mRNA表达量,降低肌生长抑制素,从而增加肌纤维数量及横截面积。日粮补充添加0.15%的有机微量元素(由蛋白质螯合铜、蛋白质螯合铁、蛋白螯合锌、蛋白质螯合锰、酵母硒及KI组成)能改善母猪产仔性能,提高母猪血清中Fe以及母、仔猪血清中的IgA含量。

  • 1.4 提高母猪繁殖性能的新型饲料和添加剂

  • 除常规饲料外,特殊加工工艺生产的饲料原料和饲料添加剂对母猪的繁殖性能和机体免疫方面都有一定影响。大豆是一类营养丰富的蛋白质饲料,对大豆加工后形成的副产品再次加工用于母猪饲料,对母猪的生产效率有积极影响。刘俊泽等[14]发现,妊娠后期母猪日粮添加9%发酵豆渣, 可能通过介导mTOR信号通路提高母猪胎盘的营养物质转运能力,从而提高胎盘效率。从母猪妊娠90 d到哺乳21 d断奶,日粮中添加2%大豆生物活性肽(SBP),可以提高功能性氨基酸浓度和抗氧化性能,缩短产程并提高仔猪的生长性能。 在妊娠母猪日粮中添加大豆黄酮(DA),能显著增加妊娠35 d和85 d猪血清中孕酮(P)、IGF1、IgG、SOD和T-AOC的含量,调节血清繁殖激素水平,增强机体抗氧化能力和免疫机能,从而改善妊娠母猪的繁殖性能[15]。Hu等[16]研究发现, 妊娠后期和哺乳期添加45 mg/kg大豆异黄酮,可提高仔猪初生重和断奶重,提高乳质量。 此外,许多单方和复方中草药的运用也是近年来研究的热点。广东紫珠提取物可不同程度降低母猪孕中期、分娩时和断奶时血清IL-1β、IL-6 和TNF-α 等炎症细胞因子水平。母猪饲粮中添加121~165 mg/kg广东紫珠提取物可改善母猪的繁殖性能,提高母猪血清抗氧化水平,缓解母猪产后炎症反应,优化母体猪肠道菌群结构[17]。龚泽修等[18] 在母猪饲粮中添加100 mg/kg的茯苓多糖能显著提高仔猪生长性能、母猪和仔猪血清免疫和抗氧化指标。党参(23%)、淫羊藿(18%)、黄芪(12%)、 益母草(14%)、白术(8%)、茯苓(9%)制成的中草药制剂能显著改善母猪日均泌乳量、产活仔数、断奶窝重、窝增重、断奶至发情间隔天数和仔猪腹泻率,对母猪的繁殖性能和仔猪的肠道发育有积极作用[19]

  • 2 公猪营养需要及提高精液品质的营养调控研究

  • 目前有关公猪的营养研究相对较少,已有研究主要从能量、蛋白、维生素、微量元素需求及饲料添加剂等方面,通过营养调控来改善精液品质以提高种猪使用寿命。

  • 2.1 能量

  • 王超[20] 研究认为, 种公猪在170~200 kg和200~250 kg两个阶段,采食量分别为7.7、8.2 kg/d, 日增重分别为454.5、375.3 g/d时,能有效提高杜洛克种公猪的生长性能、射精量、总精子数和有效精子数,维持公猪正常性欲,同时降低种公猪肢蹄病发病率和淘汰率。Liu等[21]发现,n-6 ∶ n-3 日粮比为6.6 时,新鲜精液中n-3 多不饱和脂肪酸(PUFAs)和二十二碳六烯酸(DHA)的含量增加, 精子的膜完整性和膜流动性有所改善,说明合适的日粮能改善精子活力、精子前进运动性能和速度。 功能性脂肪酸(速生元)同样能提高公猪的精液量和精子密度,从而改善公猪的精液品质。

  • 2.2 蛋白质和氨基酸

  • 蛋白质是精液形成的基础,大量研究表明日粮中蛋白质的含量及氨基酸水平对精液品质有着重要影响。任波[22]给公猪饲喂CP和Lys水平分别为13%、0.84%的日粮时发现,Lys∶Thr∶Trp∶Arg比例为100∶76∶40∶120 的氨基酸模式可通过改变精子中NO浓度来改变精子中CAMP含量,从而引起精子活力改变;此外,还能直接引起睾丸中AR受体表达量的增加,引起精子数目发生变化。 Arg是促进睾丸发育的重要氨基酸,对于不同体重阶段的公猪,Arg需求量有所不同,7~11、11~25、 25~50、50~100 kg时分别为1.08%、1.06%、1.24%和0.93%。Lin等[23]研究发现,日粮中增加0.8%Arg能显着增加公猪睾丸的体积、重量和精原细胞数量,还可以促进血清FSH和LH分泌;通过蛋白质组学分析,还确定了Arg促进睾丸发育的18 个关键蛋白,这些蛋白质主要与mTORC1 和Wnt信号通路有关。NCG作为Arg的内源性生成剂,可在机体中合成Arg并参与Arg-NO途径。研究发现,日粮中添加0.1%NCG可以显著提高公猪精子的活力和活率,降低公猪精子畸形率,提高公猪每次射精有效精子数[24]

  • 2.3 维生素和微量元素

  • 公猪日粮中添加400 mg/kg维生素E可防止精子脂质过氧化,并保持新鲜精液中精子更高的活力。较单纯饲喂基础日粮而言,添加类维生素A(2000 IU/kg)在提高原精和稀释精液活力方面效果更显著,而 β-胡萝卜素类添加剂(3 g/d) 在提高射精持续时间方面效果更好[25]。然而维生素的添加不是越多越好,应严格按照公猪的营养需要添加,超出营养标准的维生素水平对公猪的繁殖性能没有益处。

  • 2.4 改善精液品质的新型饲料和添加剂

  • 新型饲料如益生菌发酵饲料等能够改善ABTS和DPPH自由基清除活性,有效提高精子运动性能、 顶体完整性、质膜完整性、线粒体膜电位以及精液抗氧化能力,减少精子发生脂质过氧化损伤,从而改善精液品质。而中草药添加剂同样能有效改善公猪精液品质,如200 g/t淫羊藿提取物和500 g/t止痢草油可降低高温下的热应激,改善公猪性欲和提高精液抗氧化能力,从而提高公猪的精液量和精液品质[26];复合中草药添加剂(熟地黄、淫羊蕾、 五味子、覆盆子、金银花以1 ∶ 1 ∶ 1 ∶ 1 ∶ 2 比例混合)能显著提高公猪精液量、精子活力和精子密度,并有效降低精子畸形率[27]

  • 3 仔猪营养需要及抗生素替代产品的研究

  • 在哺乳前期,仔猪的营养来源主要为母猪的乳汁;在哺乳后期,母猪乳汁中的营养成分已无法满足仔猪的快速生长,需要另外补充教槽料以满足其生长发育,并使仔猪肠道逐渐适应固体饲料,减少断奶应激。因此,断奶仔猪的营养研究主要侧重于对仔猪肠道发育、减少腹泻的研究。

  • 3.1 能量

  • 近年来关于仔猪能量需要的研究较少,除多个国家发布的营养标准外,仅有少量的文献报道。相关研究发现,断奶仔猪适宜的蛋白水平为21.5%, CP和DE比为13.43 g/MJ,5~10 kg阶段仔猪的DE和ME摄入量分别为4.87 MJ/d和4.68 MJ/d,5~11 kg荣昌烤乳猪系适宜DE水平为15.07 MJ/kg,断奶藏香仔猪适宜的DE水平为12.55 MJ/kg。

  • 3.2 蛋白质和氨基酸

  • 研究发现,无抗日粮中降低蛋白质水平(由NRC推荐的23%降低至17%)可改善21 日龄断奶仔猪生长性能、缓解腹泻;而在低蛋白日粮基础上, 无论通过增加动物蛋白还是植物蛋白来提高日粮蛋白质水平,均会降低仔猪肠道的消化吸收功能,导致仔猪生产性能下降,并通过破坏肠道屏障功能促进氯离子分泌关键蛋白CFTR的表达,导致仔猪腹泻[28-29]。 氨基酸是构成蛋白质的基本单位, 优质的氨基酸组成能在降低饲料蛋白水平的同时提高生产性能。7~14 kg仔猪获得最佳生长性能所需的SID Lys为1.37%,Lys摄入量适宜范围为4.63~4.87 g/d,28~42 日龄( 约6.5 kg) 中等腹泻仔猪Arg适宜水平为1.4%[30]。对氨基酸组成的研究发现, 断奶仔猪日粮中添加1%复合氨基酸(Glu ∶ Gln ∶ Arg ∶ Gly ∶ N-NAC为5 ∶ 2 ∶ 2 ∶ 1 ∶ 0.5)可以改善肝功能、提高抗氧化能力,同时调控仔猪肝脏能量状态及游离氨基酸代谢,并可能影响肝脏的脂肪代谢和免疫功能[31]。 断奶仔猪日粮适宜的Met ∶ SAA比为0.51,当比值降低时可能导致氧化应激和肠绒毛萎缩,增大则会影响肠道生长发育;在抗生素条件下,7~17 kg断奶仔猪最佳SID TSAA与Lys的比例为58.5%, 无抗条件下超过60%其肉料比能实现最大化[32]。 在4 日龄杜长大新生仔猪的代乳料中添加0.8%精氨酸组,可提高断奶后仔猪生长性能[33]

  • 3.3 维生素和微量元素

  • 维生素除满足断奶仔猪生长需要外,对其肠道发育同样起到重要调节作用。Li等[34]对断奶仔猪中补充7 mg/kg VB6 可增加绒毛高度和绒毛宽度, 减少Ki67 阳性细胞计数,促进回肠中炎性细胞因子的mRNA表达,并改变空肠和回肠中AA转运蛋白的mRNA表达,从而影响断奶仔猪的肠道形态以及蛋白质的吸收和代谢。 日粮中添加高剂量氧化锌(> 2250 mg/kg)能改善断奶后2 周内仔猪的生长性能,添加2 周或4周高锌均能显著降低仔猪断奶腹泻。高锌可提高仔猪血液抗氧化酶活性,促进肠黏膜紧密连接蛋白表达和绒毛发育,抑制肠黏膜炎症反应;但高锌显著改变了肠菌群组成、降低菌群多样性[35]

  • 3.4 改善肠道健康的无抗饲料添加剂

  • 为改善仔猪肠道健康、促进生长发育,抗生素替代产品的研发已成为饲料行业关注的重点。在无抗饲料研究中,主要集中在微生态制剂、植物精油、中草药提取物、壳聚糖、卵黄抗体等方面。饲料经发酵后产生多种益生菌及其代谢产物,可增强动物胃肠道酸性环境、调节肠道内菌群平衡、提高肠黏膜免疫系统的免疫功能、促进肠道健康,进而提高动物的生长性能[36]。研究发现,断奶仔猪日粮中添加丁酸梭菌能降低空肠中假单胞菌属、埃希氏菌属和肠杆菌等条件致病菌的相对丰度,提高粪便球菌属、罗斯氏菌属、丁酸球菌属、布劳特氏菌等体内健康菌群的相对丰度,从而改善仔猪肠道菌群结构、促进肠道健康[37]。日粮中添加活酵母或酵母菌粉(菌种Y200007)可提高饲料转化率、 促进肠道发育,并改善机体全身免疫性能[38];添加5×1010 CFU/kg从猪粪中分离的罗伊氏乳杆菌LR1,可以通过上调肠道氨基酸转运载体表达及激活肝肠轴mTORC1 信号通路,促进氨基酸代谢, 改善断奶仔猪的生长性能、肠道形态和肠屏障功能[39]。添加植物乳杆菌LP(5×1010 CFU/kg), 可通过刺激TLR2 信号保护肠道屏障功能的完整性, 同时可通过抑制因ETEC K88 攻毒诱导TLR4 介导的p38 和ERK1/2 MAPK信号通路的激活,减少肠道病原菌的黏附和对先天免疫防御系统的过多刺激,最终减少幼龄仔猪腹泻和促进生长[40]。解淀粉枯草芽孢杆菌(Ba)替代金霉素显著提高了淀粉酶、二糖、Na+/K+-ATP酶、胰凝乳蛋白酶的活性, 同时保持肠道完整性并提高肠道菌群的多样性[41]。 采用嗜酸乳杆菌固定化的方法制备的蒙脱石嗜酸乳杆菌复合物对促进仔猪生长和改善肠道健康的效果优于单独添加[42]。 抗菌肽Cathelicidin-BF(C-BF)和诺氟沙星烟碱(NFN)通过提高空肠和结肠中小肠紧密连接蛋白1(ZO-1)、闭合蛋白和紧密连接蛋白1 抗体的表达水平,能有效改善仔猪腹泻、减轻肠道炎症、增强肠道屏障功能以及提高生长性能[43]。 植物精油和中草药等其他添加剂也是替代抗生素的研究热点。牛至油具有杀菌抑菌及抗氧化作用,日粮中添加400~700 mg,与饲喂抗生素的仔猪在生长发育、肠道形态和腹泻频率方面均无显著差别,表明牛至油可作为抗生素替代产品添加到饲料中。试验表明,使用黄芪系列中草药添加剂后,21 日龄断奶仔猪个体重和窝重、哺乳期日增重分别提高23.33%、32.14%、30.65%。日粮补充0.4%银耳多糖可显著改善断奶仔猪空肠形态、提高空肠黏膜消化酶活性。博落回(Macleaya cordata)提取物可增加回肠的绒毛高度,1%发酵黄芪党参能显著降低断奶仔猪腹泻率。大豆异黄酮可以通过抑制脂多糖(LPS)诱导的p38 和TLR4 依赖性途径的激活,部分减轻LPS的屏障破坏作用并改善肠屏障功能。50 mg/kg低分子量壳聚糖(LC)可以有效提高断奶仔猪的生长性能,改善肠屏障功能并减轻肠道炎症[44]。综上,在无抗情况下多种饲料或添加剂均可不同程度促进仔猪生长,但是抗生素替代是个系统工程,还需要更多的研究和系统的解决方案。

  • 4 生长育肥猪营养需要及改善肉品质的营养调控研究

  • 4.1 能量

  • 加 ×(长 × 大)三元杂交育肥猪,20~60 kg生长阶段、60~100 kg育肥阶段的最适日粮DE水平为13.4 MJ/kg、13.2 MJ/kg。对育肥猪早期进行20%的能量限饲(正常DE为13.69 MJ/kg)并在中后期给予充分的营养补偿,可提高其补偿期的生长速率和饲料利用率,且不会对机体免疫和肌肉品质造成不利影响,同时有助于降低背膘厚度,提高胴体瘦肉率。Zhao等[45]研究发现,与高蛋白 + 高净能日粮相比,低蛋白 + 高净能日粮和低蛋白 + 低净能日粮组各阶段生长育肥猪的氮摄入量、尿氮和总氮排泄量降低,进一步降低净能水平至0.35~0.5 MJ/kg并不影响猪生长性能和营养物质消化率。

  • 4.2 蛋白质和氨基酸

  • 蛋白和氨基酸是影响育肥猪生长发育和肉品质的重要营养元素。Ma等[46]发现日粮中添加1% L-Arg,可通过肌纤维类型和代谢酶的差异表达, 使肌内脂肪(IMF)含量增加约32%,并降低滴水损失,从而改善猪肉品质。由于蛋白饲料资源不足, 低蛋白日粮技术能在一定程度上缓解蛋白源饲料资源短缺的问题。Peng等[47]给45 日龄的生长猪分别饲喂CP水平分别为20.00%、17.16%、15.30%和13.90%的基础日粮,并添加生长素(IAA)以满足其生长需要。研究发现,降低饲料中CP水平会降低平均日增重、血浆尿素氮浓度和肝脏和胰腺相对器官重量,增加饲料转化率,并对十二指肠的绒毛长度及回肠、空肠的隐窝深度造成影响;补充IAA后可以将日粮CP水平从20%降低到15.30%, 对生长性能没有显著影响,对免疫学参数的影响也很有限。段佳琪等[48]也发现日粮蛋白质水平降低至14%和12%对猪生长性能和胴体品质无显著影响。林维雄等[49]将常规饲粮CP水平(17.4%)降低至14.3%,总磷水平(0.5%)降低至0.40%,并添加120 mg/kg植酸酶,能显著提高生长猪平均日增重,减少粪氮、粪磷含量;在此基础上,继续添加120 mg/kg NSP酶对生长猪的生长性能和粪中养分含量不产生影响。此外,在低蛋白日粮中添加支链氨基酸L-Leu、L-Val和L-Ile有利于机体生长性能和免疫性能的提升[50]。王晶等[51]发现,生长猪饲喂有效磷2.4 g/kg的玉米-豆粕型饲粮(总磷0.45%)时,添加500 U/kg植酸酶可达到与常磷饲粮(总磷0.56%)相同的生长性能,添加1000 U/kg植酸酶时养分表观消化率提高更明显。由此说明, 在降低蛋白水平的同时补充生长素、氨基酸或植酸酶等营养物质能在一定程度上满足低蛋白水平下育肥猪的氨基酸需求。

  • 4.3 维生素和微量元素

  • 维生素对机体的生理功能和营养代谢起重要作用,是许多酶的辅酶或辅基,在改善肉品质方面有重要作用。Duffy等[52]研究发现,饲料中添加以50 μg/kg为上限的25-OH-D3 能表现出最高的背最长肌总维生素活性和血清总25-OH-D浓度。日粮添加50 μg/kg富含维生素D2 的蘑菇能有效改善ADG和FCR,并有助于改善猪肉品质和猪肉颜色的稳定性。添加维生素E可减少烹饪损失,增加猪肉中总多不饱和脂肪酸(PUFA)、 C18 ∶ 2n-6 和C18 ∶ 3n-3 的含量,以及超氧化物歧化酶和谷胱甘肽过氧化物酶的活性[53]。微量元素(如硒)具有很强的抗氧化性能,研究表明, 有机硒相比无机硒具有更高的吸收效率,通过提高机体抗氧化力,改善猪肉的pH值、肉色、系水力, 补充添加0.25、0.35 mg/kg硒可显著增加肌肉中硒的沉积(≥ 0.25 mg/kg)。酵母硒能有效改善肥育猪肉的抗氧化能力,改善肥育猪的肉色、pH值及系水力等指标,提高肥育猪的肉品质,并延长猪肉货架期[54]

  • 4.4 提高生长性能、改善肉品质的饲料添加剂

  • 其他营养物质对提高育肥猪生长性能、改善肉品质也起到非常重要的作用,如添加酵母菌制剂、 乳酸菌制剂和芽孢杆菌制剂可以通过上调肉质相关基因表达,调控肌纤维类型基因表达和比例,改善肌肉组织学形态结构,提高肉品抗氧化性能,进而改善肉品质;日粮饲喂200 mg/kg微生态制剂〔粪肠球菌(粪肠球菌∶枯草芽孢杆菌∶嗜酸乳杆菌=1∶1∶1,质量比)≥1×109 CFU/g、枯草芽孢杆菌≥1×109 CFU/g、嗜酸乳杆菌≥1×109 CFU/g〕 可有效提高生长猪的生长性能、部分营养物质表观消化率、抗氧化能力和免疫力;0.15%微生态制剂(由酵母菌、芽孢杆菌、乳酸菌组成,微生态制剂含活菌总数≥2×108 CFU/g)能有效提高生长猪生产性能,降低腹泻率,提高粪中双歧杆菌数量,降低大肠杆菌数量[55]。Li等[56]研究发现,日粮中含量低于9%苎麻可以部分改善背最长肌的性状和肌肉化学成分,而不会对生产性能产生负面影响, 可能是苎麻影响了脂肪的生成并改变了肌纤维的特性所致。

  • 5 猪饲料营养价值评定与精准饲喂技术的研究

  • 5.1 饲料营养价值评定

  • 准确的饲料营养价值评定可提高饲料原料的利用率和饲料配方的精准度,是实现精准饲喂的重要基础。2019 年《中国饲料成分及营养价值表》(第30 版)在原有版本的基础上,完善了饲料中的成分和营养价值数据,并对部分发布过的生物学效价数据进行了补充与完善。此外,为开发饲料资源, 相关学者对部分非常规饲料原料进行营养价值评定(表1),并在生长育肥猪日粮中进行应用研究。 然而目前猪营养领域对于断奶仔猪的饲料营养价值评定研究较少。豆粕经热机械和酶促加工前后, 其DM、CP、EE、Ash、CF、NDF、Ca、P的含量分别为88.4%、54.8%、2.3%、7.0%、4.5%、 10.8%、0.4%、0.7%和4.8Mcal/kg、94.8%、 54.3%、3.3%、7.1%、4.6%、11.1%、0.4%、0.7%, 断奶仔猪对其蛋白质的表观消化率分别为82.3%和84.2%。 正常玉米和陈化玉米的DM、EE、 Ash、CP分别为86.14%、3.36%、1.09%、7.63%和87.59%、3.63%、1.56%、8.06%时,断奶仔猪对它们的表观消化率分别为84.05%、72.43%、 50.81%、75.29%和86.99%、71.59%、60.86%、 81.43%。Pan等[57]研究玉米和高粱在仔猪饲粮中的运用发现,玉米和高粱的DE分别为16.36%和16.35%,对DM、GE、CP的总表观消化率分别为90.28%、87.90%、77.79%和91.20%、88.06%、 73.72%。 断奶仔猪的肠道处于发育和适应固体饲料的阶段,相对生长育肥猪更为脆弱,因此研究断奶仔猪的饲料营养价值和消化率,对提高仔猪对固体饲料的吸收能力、促进肠道发育、改善生长性能有着重要的意义。

  • 5.2 精准饲喂技术研究进展

  • 精准饲喂是基于管理群组内动物年龄、体重和生产潜能的差异,根据个体的营养需要,适时适量地为一组动物或个体提供成分和数量适宜饲粮的饲养技术。精准饲喂技术需结合生猪的营养需要模型、 数据采集系统和精准投喂系统,将适合的日粮准确饲喂给个体或群组。

  • 5.2.1 营养需要模型

  • 根据Inra Porc改编的营养模型可预测母猪妊娠期个体养分需求的动态变化[58], 结合泌乳母猪的养分利用率与猪场的生产数据(分娩时间、产仔数、胎次、背膘厚、初生重、断奶成活率、断奶窝重等),推算个体母猪的营养需要。 Gauthier等[59]评估了母猪不同生理状态和行为的营养需求,结合试验场的生产观测数据,建立了基于Inra Porc软件可预测个体动态需求的机械模块。 该软件可考虑营养参数(如DE、SAA和CP)以及日粮不同营养素之间和日粮与动物之间的相互作用,还能利用与采食量和生长有关的模型参数测定某一动物群体的平均状况[60]。在Inra Porc软件的应用中,可利用生物气候学模块预测室外温度对母猪感知室内温度的影响,排除营养预测中环境温度的影响,从而提高营养需要计算的精准度。 NRC(2012) 采用数学建模的方法, 应用20~40 kg生长育肥猪、妊娠母猪和哺乳母猪3 种模型,计算标准回肠可消化氨基酸、氮、可消化磷和总钙的需要量。NRC(2012)营养模型充分考虑了营养摄入、生产性能、蛋白和脂肪沉积、体重变化和热环境的影响,能够相对精准地计算出个体的营养需要。 通过精准的营养模型计算个体或群组的营养需要,准确地饲喂目标个体(群组),能有效提高饲料利用率。Charlotte等[58]根据Inra Porc获得母猪每日最佳营养需要量并进行精准进料,发现与常规饲喂相比,精确饲喂可使SID Lys的总供应量减少27%,CP的总供应量减少28%,饲喂量不足或过量的母猪数量减少。Gauthier等[59]也证明了与传统饲喂方式相比,精准饲喂可以降低平均Lys摄入量(减少6.8%)、P摄入量以及哺乳期过度饲喂母猪的采食量。

  • 5.2.2 生产数据采集系统

  • 随着大数据的应用和人工智能的发展,无线连接(3G/4G、Wi-Fi、卫星)、 移动设备(智能手机和平板电脑)、传感器和云计算运用到生猪产业中。畜禽行为可通过加速度传感器等技术不间断地采集和识别,数据采集系统可对猪的行动类型如咳嗽、饮水、区域活动等进行监测, 对猪的健康进行分析判定,为精准营养模型的建立、 改进和精准饲喂系统的应用奠定基础。现已投入应用的生猪智慧养殖平台提供了通过使用移动端录入数据和利用图像识别技术、物联网技术对母猪记录卡数据自动提取并录入生产数据的采集方式,提高了部分业务的生产效率。

  • 6 展望

  • 营养调控技术根据猪只的生理状态提供满足其生长发育及生产所需的能量、蛋白、维生素、微量元素等营养物质。而通过添加功能性营养物质(如益生菌、活性肽、酮类、植物提取物等)也可不同程度地提高种猪繁殖性能和机体免疫力、促进仔猪肠道健康和生长发育、改善肉品质等。随着无抗时代的到来,环保要求越来越严格,以及消费者对肉品质追求的不断提高,营养与饲料科学研究领域面临的挑战也越来越大。运用细胞模型、小鼠模型、 攻毒模型、无菌动物模型、粪菌移植等手段研究越来越丰富,采用转录组学、蛋白组学、代谢组学、 宏基因组学甚至培养组学的组学技术也越来越广泛,使得猪营养研究进入到一个新的时代。此外, 随着智能设备及智能养殖技术解决方案的应用和发展,传统生猪养殖业逐步向智能化产业升级转型。 智能养殖技术的应用使养殖过程更为信息化、可视化,有利于促进营养调控技术的研究。生猪营养调控技术的研究和应用符合养猪业可持续发展的高效、安全、优质和环保的要求,可有效提高生猪生产效率。综上,通过对猪只营养需要、饲料成分以及饲料资源开发的深入研究,结合现代信息技术以及算法模型,将真正实现通过营养手段调控猪只的健康生长,促进其安全优质生产,推动我国生猪产业向精准化、智能化、绿色化可持续健康发展。
