从岭南水果深加工技术,特色果酒的制作产业与技术的研究进展角度出发,研究了包括荔枝、香蕉、木
瓜、菠萝、龙眼、芒果在内的12 种不同品种水果的果酒酿造与开发应用。详细介绍了岭南4 大名果果酒的产业意义
与酿造工艺,简略介绍了其余8 种特色水果的果酒加工进展。同时,分析了现今岭南果酒生产中存在的果酒技术基
础不高、深加工水平受限、技术行业标准缺失、消费市场受到限制等4 大主要问题,并就岭南特色果酒深加工的发展
前景提出了建议。 |

This paper investigated fruit wine and application of 12 fruits including lychee, banana, papaya, pineapple,
longan, mango etc from the view of making industry and research progress in special fruit wine. The industrial significance
and brewing process of 4 famous fruit wines in Lingnan were detailed. Meanwhile, this paper analyzed 4 main problems in
Lingnan fruit wine production, which contained imperfect technical basis, limited deep procession, lack of industry standard
and small consumer market. At last, this thesis made a suggestion on the development of deep processing of Lingnan
sepcial fruit wine. |
