干,通过单因素及正交试验,以半干龙眼的菌落总数为指标,优化涂膜液配方。结果表明:涂膜保鲜液中苯甲
酸钠浓度对半干龙眼保鲜效果的影响最大,而龙眼核、壳提取物、山梨酸钾和壳聚糖浓度对保鲜效果没有显著
影响。综合考虑保鲜效果与成本,涂膜液的最佳配方为:龙眼核、壳提取物的可溶性固形物含量26 Brix,苯甲
酸钠浓度0.16%,山梨酸钾浓度1%,壳聚糖浓度1%。 |

The coating formula was constituted by extracts of longan stones and pericarp,sodium benzoate,
potassium sorbate and chitosan. This coating was applied in the semi-dried longan. Single factor and orthogonal
experiments were used to optimize the coating formula. Results showed that the quality of semi-dried longan was mostly
affected by sodium benzoate while the other three ingredients had no significant influence. Combined the preservation
effects and costs,the coating formula was determined as follows:extracts of longan stones and pericarp at 26 Brix,with
sodium benzoate concentration at 0.16%,potassium sorbate concentration at 1% and chitosan concentration at 1%. |
