The optimal extraction conditions of flavonoids in Kalimeris indica root were determined by orthogonal design. The results showed that the optimal conditions were as follows: 70% ( volume fraction) ethanol,extraction time of 2.5 h, 1∶20(g/mL) solid-liquid ratio,the yield of total flavonoids could reach 16.422%. The inhibitory effects of flavonoids from root of K. indica on the activity of lipoxygenase of Maojian tea leaves were also studied,and were compared with the same concentration of BHA, BHT and Vc. The results showed that flavonoids from root of K. indica,BHA, BHT and Vc all had inhibitory effects on the activity of lipoxygenase,IC50 were 34.282 μg/mL, 10.938 mg/mL,9.049 μg/mL and 9.04 μg/mL.
