以西番莲果皮为主要原料,采用喷雾干燥法制备西番莲果皮粉,研究助干剂及喷雾干燥参数
对西番莲果皮粉品质的影响,结果显示:助干剂种类及添加量、喷雾干燥参数对西番莲果皮粉集粉率、水分
含量、溶解度以及溶解时间均存在显著影响,其中西番莲果粉的溶解时间随可溶性淀粉含量增加呈缩短趋
势,而羧甲基纤维素钠(CMC)含量增加会延长溶解时间,导致粉体溶解性变差。通过单因素和正交试验
优选的助干剂配比和喷雾干燥工艺参数为:可溶性淀粉添加量90%、CMC 添加量6%、进料流量600 mL/h、
进风温度170℃,得到的西番莲果皮粉粉体细腻,呈淡红色,气味芳香,集粉率为34.7%,水分含量3.52%,
溶解度82.17 %。 |

This paper studied the effects of drying aids and spray drying parameters on the quality of passion
fruit powder by using spray drying method,and its main raw material were passion fruit peels. The results showed
that all the types and amounts of drying aids,spray drying parameters had a significant impact on the powder
collection rate,water content,solubility,and dissolution time of the passion fruit powder. The dissolution time of
passion fruit powder tended to shorten with the increase of soluble starch content,while the increase of the content
of sodium carboxymethyl cellulose( CMC) would prolong the dissolution time,which was leading to poor solubility
of the powder. The optimum proportions of auxiliary drying agent and spray drying process through single factor and
orthogonal test were as follows: the addition level of soluble starch and CMC were 90% and 6% separately,feed flow
was 600 mL/h,inlet air temperature was 170℃,and passion fruit powder from experiment was delicate,reddish,
and aromatic. The powder collection rate was 34.7%,the moisture content was 3.52%,and the solubility was 82.17%. |
