糖对水果品质的提升有着极为关键的作用,会直接影响水果的色泽和口感,进而影响消费者对水果的接受程度。糖不仅是植物的碳源和能量来源,而且是信号分子,参与调控果实生长过程中的胚胎形成、种子萌发、果实营养生长及生殖生长等。果实发育成熟过程中糖的合成、运输、代谢和含量的变化,受酶、基因和转运蛋白的调控。此外,糖代谢与激素和色素在果实发育成熟过程中存在复杂的关系。本文综述了糖代谢及其信号转导在果实发育和成熟过程中的作用,并介绍了糖信号转导机制与激素、色素的调控关系,从而为水果的品质改变和采后贮藏保鲜提供重要的理论依据。 |

Sugar plays a key role in improving the quality of fruits, which directly affects the color and taste of fruits, and then influences consumers’ acceptance of fruits. Sugar is not only the carbon source and energy source of plants, but also the signal molecule, which is involved in the regulation of embryo formation, seed germination, fruit vegetative growth and reproductive growth during fruit growth. The changes of sugar synthesis, transport, metabolism and content during fruit development and ripening are regulated by enzymes, genes and transporters. In addition, sugar metabolism has complex relationships with hormones and pigments during fruit development and ripening. Herein, it reviews the role of sugar metabolism and its signal transduction mechanism in fruit development and ripening, and introduces the relationship between sugar signal transduction mechanism and the regulation of hormones and pigments, in order to provide important theoretical basis for fruit quality change and postharvest storage. |
