Polyphenols is one kind of important functional composition contained in plants. It has been used in many industries, such
as agriculture, food, leather-making and so on. In this paper, the species, structures, detection, extraction and bioactivity of polyphenols were summarized. The methods of its detection and extraction were discussed, and the advantage and disadvantage were also compared.The bioactivity of polyphenols was recommened in detail. The application of polyphenols in food industry was introduced, the prospect was also discussed. |
