Abstract:
      Flavonoids have antioxidant, anti-tumor, anti-cancer and other physical activity, but these compounds have some shortcomings of poor fat-soluble or water-soluble, low bioavailability and stability. Biotransformation of structural modification can improve solubility, and enhance physical activity and stability. This article reviewed several important bio-catalytic reactions in the biotransformation of flavonoids in recent years, hydrolysis, esterification, glycosylation, and prospect of biotransformation was anticipated.
