This research analyzed tuber and stem leaf nutritional composition of red, white-red, round-white, long-white and white
Jerusalem artichoke. The result showed that the total sugar contents of Jerusalem artichoke tuber were above 70% of dry weight, the inulin content of long-white Jerusalem artichoke reached the maximum content (averagely 77.5%). The protein contents of stem leaf in all Jerusalem artichoke were below 10%, while the ash content were 5%~10%. Among the 5 kinds of Jerusalem artichoke, the water, ash, fat,water-soluble content, palatability index of red Jerusalem artichoke leaf were maximum which was best proper for common feed. |
