Abstract:
      Banana, which is rich in nutrition and has outstanding health functions, has become a research focus. Banana is an abundant resource in China, but banana processing is behindhand. Banana powder is a kind of processed product with development prospect.The classification, nutrition value and the feasibility as a new kind of functional food additive were introduced in this paper, and the key processing technologies and its utilization were summarized, in order to provide technological basis for further development and application.
