Abstract:
      In order to provide basic scientific basis for the natural wild resource cultivation, processing and utilization in Vigna minima (Roxb.), the grain shape, thousand seeds weight, bulk density, pod fruit rate, particle size range, angle of gravity, water content,acidity and so on 15 the physical and chemical indicators were determined by the national standard and traditional method with Wild Vigna minima (Roxb.) for materials in Zhengzhou region, and also the characteristics were expounded. Results showed that the grains of Vigna minima (Roxb.) were elliptic brown small grain, thousand seeds weight were 27.1176~28.1799 g, imperfect grains were less than 2% and the acidity between 8.0~8.6 mmol H+ /10g, bulk density were 807.5~809.5 g/L, relative density between 1.25~1.28, water containing amount range were 9.43%~9.60%, average clarity was 95.09%, their average angle was 14.3 degrees, repose angle was 31.9degrees, the rate of fruit was 66.72%, pod ratio was 2.00 on average. Vigna minima (Roxb.) has a certain development application prospect in the field of Chinese traditional food.
