The statistical analysis method and the extended linear expenditure system model (ELES) were used to analyze the vegetable consumption of urban residents in Shanghai, and sum up the characteristics of vegetable consumption of urban residents in Shanghai since 1995 on available data, then the parameters of ELES model were estimated, and calculated the consumption elasticity of major food. It was found out that the income elasticity of vegetables and grain were similar, they were all the life necessities of urban residents, the marginal propensity to consume was much lower than meat;these three kinds of food were complementary products; vegetables consumption were obviously affected by income and the price of itself. |
