Abstract:
      Crab gonad contains abundant lipid. This paper introduced the lipid composition of crab gonad and compared the lipid in different periods or in different species. Then, the paper also elaborated some aroma compositions generated by lipid in the crab gonad and reviewed the mechanism in the aforementioned reactions, to explore the effect of lipid in the crab gonad on the aroma and provide theory basis for further study of aroma positions in crab.
