The process of mass and heat transfer happens during the storage of fruits and vegetables. Investigating such processes benefits obtaining the change law of their quality and the optimizing of the storage and transport equipment.On the base of describing the principle of mass and heat transfer in fruits and vegetables, this paper reviewed the relative widespread used research methods in such field, including experimental methods, building mathematical models and CFD simulation methods. Meanwhile, the analysis and comparison among them were given. We found that experimental methods had the properties of high accuracy, high direct-view and high cost, mathematical models provided a new way to predict the quality change of fruits and vegetables, and that mathematical models and CFD simulation methods were not limited to season change, while they needed modification and verification. |
