According to the survey data on chicken, chicken liver and egg collected from Guangdong province,
the contents of arsenic (As), lead (Pb), cadmium (Cd), chromium (Cr), mercury (Hg) in the samples were analyzed.
The dietary exposure risk caused by these heavy metals was evaluated using the method of point estimation. The
results showed that the contents of As, Pb, Cd, Cr and Hg in chicken liver and egg samples were lower than the
limits issued by 野National Food Safety Standard-The Limits of Pollutant in Food冶. The qualified rate of chicken liver
and egg was 100%, the qualified rate of chicken was 95%. The risk assessment results showed that children belonged
to the sensitive people to heavy metal. The risk quotient of heavy metal in chicken products from Guangdong
province was far lower than 1, and it claimed that the probability of health risk of heavy metal via chicken products
exposure in Guangdong province was low. |
