Abstract:
      In order to study the relationship between rice eating quality and enzymes related to nitrogen metabolism, seeds of Jinchuan 1 and Jinyuan 45 were used in this research by germinating seeds and getting seedlings. The contents of soluble protein and glutamate, activities of GOT, GPT, GDH, GS and GOGAT were detected. The results showed, there was no significant difference on contents of soluble protein and activities of GOT, GPT from seeds and seedlings of rice cultivars with different eating tastes, but in the same cultivar, contents of soluble protein and glutamate, activities of GOT, GPT, GDH in seedling leaves were significantly higher than those in seeds; GS/GDH value in the seedlings of Jinchuan 1 was significantly higher than that in Jinyuan 45, but no difference was found in seeds. The content of glutamate in seedling leaves of Jinchuan 1 was significantly higher than that in Jinyuan 45, but no difference was found in seeds, the change trend of glutamate had a significantly positive correlation with the change of GS/GDH value and with the difference of rice eating tastes. Cultivars with different eating tastes showed different activity levels of nitrite reductase.
