Abstract:
In this paper, the coconut water from laboratory or factory after natural pre-fermentation was used for bacterial cellulose(BC)production. The results showed the fermented coconut water(FCW)produced higher BC than natural coconut water(NCW)no matter from local market or from aboard. The supernatant of FCW after centrifugation showed no significant difference in BC yield with FCW,so the BC yield increase might be due to the various metabolic products in FCW. A plenty of acetic acid, lactic acid and succinic acid were found in FCW by HPLC analysis. After the addition of 0.3% acetic acid or 0.3% lactic acid into NCW,the BC yield was 4.12,4.07 g/L,respectively,higher than the control(0.88 g/L).
