Study on slaughter performances and meat quality of whitefeather strain from Qingyuan partridge chicken |

Abstract: |
Slaughter performances and meat quality were measured in the white feather chicken strain separated
from Qingyuan partridge chicken at 120 days old in this study. The results showed that, the average carcass dressing
percentage was 90.36% and 91.24% in male and female chickens. The percentage of eviscerated yield was 60.56%
and 60.40% and was not obviously different from the partridge chicken strain. The content of unsaturated fatty acid was
66.31%,61.59%,63.85% and 63.88% in leg muscle and chest muscle of the male chickens and female chickens. The
content of essential fatty acid was 23.31%,20.20% and 16.54%,18.95%. In 100 g leg muscle and chest muscle of
the male chickens and female chickens,the content of total amino acids was 19.00 g,18.00 g,15.80 g and 20.10 g,
the content of essential amino acids was 6.89-8.73 g,the contents of flavor amino acid were 6.05-7.36 g,the content
of inosinic acid was 150 mg,248 mg,150 mg and 260 mg. It indicated that the white chicken strain had good carcass
performances and meat quality in the native chicken resource superiority. |
