Abstract: |
In the paper,effects of the compound film-coating antistaling agent of Locust bean gum with xanthan
gum on Annona squamosa Fruits quality at low temperature of 8℃,12℃ and room temperature were studied. The
antistaling agent was composed of Locust bean gum with xanthan gum for the coating matrix,the antimicrobial
Chinese medicinal herb such as Coptis chinensis and Artemisia argyi was taken as film-forming additives. The results
showed that,compared with control group,cracking rate,bad fruit rate and browning index could be reduced,
enzyme activitivity of amylase and PPO could be inhabited,the rate of soluble solids and starch transformation could
be slowed down. The effect of composite film-coating at 8℃ of storage was slightly better than that preserved at 12℃.
Under low temperature condition,the composite film-coating antistaling agent of Chinese medicine C. chinensis and A.
argyi played a certain role in delaying the aging of A. squamosa. |
